Avocado and Banana Frosty

Now that the kids are back in school, try this healthy, after-school vegan snack made with California Avocados, banana, cocoa powder, coconut oil, and agave.

My avocado and banana frosty features my favorite super fruit—California avocados—and it’s guaranteed to hit the spot when your kids get off the school bus.

It's hard to believe something as luscious as this frosty is classified as a "snack," instead of a dessert, but given all the great nutrition in every creamy bite, I'm serving it up as an after-school nibble. The avocado in this recipe adds healthy monounsaturated fat as well as vitamins, minerals, and antioxidants. To jazz up each bowlful, top with shredded, unsweetened coconut, fresh berries, sliced bananas, or chopped nuts.
Ingredients
  • 1 ripe, fresh California Avocado, peeled, seeded and cut into ¾-in. dice and frozen
  • 1½ ripe bananas, peeled, cut into ½-in. slices and frozen
  • 3 Tbsp. agave nectar
  • 3 Tbsp. cocoa powder
  • 1 Tbsp. virgin coconut oil
  • 2 tsp. lemon juice
  • 1 tsp. vanilla extract
  • Pinch salt
Instructions
  1. Remove the avocado and banana from the freezer and thaw slightly, about 20 minutes.
  2. Place the avocado, banana, agave nectar, cocoa powder, coconut oil, lemon juice, vanilla extract and salt in a blender and process for 60 seconds. Stop and scrape down the sides of the bowl. Continue to process until smooth and creamy; the mixture should resemble soft serve ice cream.
  3. Scoop the frosty into bowls and garnish with optional toppings.

 

  1. If we aren’t adding it to our smoothies, I get to make salads that my kiddos actually eat with cashews, dried apricots and of course, avocado!!! Never fails to be a winner.

  15. I always add avocados to my sandwiches and make guacamole for a spread on sandwiches instead of mayo. I have backyard chickens and add avocados to my AM eggs! So good!!! So glad I follow you on facebook! Great recipes!

  16. My favourite way to use avacados is as a topping to my recipes when I serve the dish.   17. As a child I can remember eating avocados sliced in half (with the pit removed of course) with a bit of apple cider vinegar poured in the hole the pit left. Just scoop and eat. I still eat them that way to this day. Love it. I also eat them on sandwiches and in salads. Yummy!!!

  20. I just recently discovered that we love avocados. I have been missing out for years! We love them in guacamole, sliced in sandwiches and salads and I even have recently breaded and deep fried them which I know isnt the healthiest but it was good!

    They are so versatile and healthy. I put half an avocado in my smoothies for added creaminess and flavor. I chop avocados to put in my corn, black bean, salsa dip with cilantro and lime juice. I pack guacamole in my kids lunch boxes with baby carrots and sliced cucumbers. Delicious!

  36. I keep trying new avo recipes since my hb and son aren’t big avocado fans. This week I’m trying a pesto w/ avocado on pasta w/ grilled chicken and fresh tomatoes. my personal favorite is a sweet guac w/ cranberries though!

  37. I love doing a vegan version of Alfredo with my Avocado! you blend up the Avocado with lemon juice/zest, olive oil, red pepper flakes, salt and pepper and put it on your pasta!! SOOOOO creamy! for sure the best Vegan avocado dish out there!

  39. mix a chicken salad with avocado instead of mayo. guacamole on a chrispy corn tortilla topped with shredded chicken with a dollop of sour cream. guacamole with sour cream and a serraño chile sause makes a.great dip.
    why just slice avocados when there’s more to it by mixing it.

  41. My favorite way to add avocado is in it’s simplest, freshest form: cubed and added to salads, couscous, or risotto. But there are many wonderful ways to transform it: mash with goat cheese and herbs for a dip or pasta sauce, grilled, mashed and spread on toast, avocado ice cream, avocado chocolate mousse, and more! Avocado belongs in every meal! 🙂

  42. For hors d’oeuvres I like to layer a piece of avocado, grape tomato, black olive, cooked bacon and Jack or mozzarella cheese on toothpicks.

  53. I make a California Caprese Salad, just by adding sliced avocado to the tomato, mozzarella, basil and olive oil.then a light sprinkling of salt and pepper. (Sometimes I’ll add fresh cooked bacon bits…)

  54. As Peruvian, one of our favorite sandwiches is the “triple”, sliced avocado, sliced tomato and sliced boil egg on white bread (without the crust), seasoned with salt, pepper and little mayo to secure ingredients to bread slices. Yummy!
