I’m all about healthy and easy here at LHT, and I’m all about getting kids (even the pickiest among them) to try new foods. While this open-face sandwich may seem sophisticated, it’s actually quite flexible … and kid friendly.

To turn your kids on to tartines (and hummus), set out a Make-Your-Own Tartine Bar with hummus, shredded rotisserie chicken, diced grapes, feta cheese, and arugula salad, and let everyone create their own.

Hummus is made simply from chickpeas (did you know they’re a bean and that beans are classified as a vegetable?), tahini, oil, garlic, and spices. By eating just two heaping tablespoonfuls of hummus a day, you’ll meet the Dietary Guidelines’ goal of 1½ cups of beans each week.

Hummus helps to boost fiber intake, especially when it's paired with vegetables and whole grains. Other good news about hummus: People who consume it have an overall better diet quality, a healthier body weight, and a healthier heart thanks, in part, to the good fats in tahini (sesame seeds).
Ingredients
  • 1 teaspoon extra virgin olive oil
  • 1 teaspoon lemon juice
  • 1 teaspoon honey
  • Kosher salt and pepper
  • ½ cup arugula
  • 5 tablespoons Sabra Classic Hummus
  • 2 slices whole wheat sourdough or rustic multi-grain bread, lightly toasted
  • 1 ounce rotisserie chicken, shredded or finely diced
  • 6 red or green grapes, quartered (12 slivers per tartine)
  • 1 tablespoon crumbled feta cheese
Instructions
  1. Place the olive oil, lemon juice, honey, and a few pinches of salt and pepper in a medium-size bowl and whisk until well combined. Add the arugula and toss to coat.
  2. Spread the hummus evenly over each of the bread slices. Top evenly with the chicken, grapes, arugula, and feta.

 

  1. We love Sabra Hummus! It is the best. I make breakfast tostadas, and spread hummus on the whole wheat tortilla to give it flavor. I also use hummus to coat my chicken. It gives it such flavor, and also I use tortilla chips and dip them in hummus as an appetizer.

  2. I spread hummus on a tortilla or lettuce leaf and add everything in the veggie drawer. Carrots, sprouts, cucumber, radishes, zucchini, beets, you name it. Yum.

  4. I love eating hummus with slices of cucumber. Also sometimes I will chop up hard boiled egg and mix it in, for a little extra protein. Super yummy!
