This Kale Salad with Lemon Yogurt Dressing is now my number one, go-to recipe when I’m craving something healthy, flavorful, and budget friendly for dinner.

I fell in love with this salad during a recent trip to ALDI headquarters outside Chicago where I had an opportunity to tour one of their flagship grocery stores and learn about their lineup of good-for-you, low-cost offerings.

As part of the ALDI experience, Chef Brigitte Prather demonstrated how to make this kale salad. I appreciate the simplicity of the dressing—made with  Friendly Farms plain Nonfat Greek yogurt, lemon juice and zest, Carlini Extra Virgin Olive Oil, balsamic vinegar, and SimplyNature Organic Wildflower Honey—and the versatility of the salad itself.

And you can’t beat the price at just $1.83 per serving.

While the original ALDI recipe (which I’m sharing below!) calls for add-ins like Marcona almonds, avocado, and Southern Grove Dried Cranberries, when I recreated it for my family, I set out a bunch of other ALDI finds: Specially Selected Pitted Kalamata Olives ($2.99), Southern Grove Dried Apricots ($2.79), Specially Selected Smoked Salmon ($3.49), and Specially Selected Blueberry and Vanilla Hand Rolled Goat Cheese Log ($3.99).

This recipe is from ALDI. I kept the recipe as is, but my photos reflect a few changes. When I assembled the salad, my avocados weren't ripe, so sadly, you won't see any avocados in my pictures. I also subbed raw almonds for the Marcona and added a few additional toppings: smoked salmon, goat cheese, and olives.
Ingredients
  • ½ cup Friendly Farms Plain Nonfat Greek Yogurt
  • 3 tablespoons Carlini Extra Virgin Olive Oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon balsamic vinegar
  • 2 teaspoons SimplyNature Organic Wildflower Honey
  • 1 teaspoon lemon zest
  • 1 teaspoon Stonemill Essentials Iodized Table Salt
  • ¼ teaspoon ground Stonemill Essentials Peppercorn Grinder
  • 16 cups SimplyNature Organic Kale
  • ½ cup Southern Grove Dried Cranberries
  • 2 ripe avocados, pitted, peeled and cut into ¾-inch pieces, divided
  • ½ cup roughly chopped Marcona almonds, divided
Instructions
  1. In a medium bowl, whisk together yogurt, olive oil, lemon juice, vinegar, honey, lemon zest, salt and pepper until smooth.
  2. Toss dressing with kale and thoroughly mix, massaging into leaves. Allow to rest for 30 minutes.
  3. Toss in dried cranberries, half of the avocado and ¼ cup almonds. Mound into a large serving bowl and top with remaining avocado and ¼ cup almonds.

  6. There are so many staple items that I (almost) always buy at Aldi rather than anywhere else: plain Greek yogurt, lactose-free milk, bagged spinach, Romaine lettuce, cheese (including goat cheese, feta and blue cheese crumbles, and sliced muenster).

  25. Aldi has the lowest prices on milk and bread in my area. Also, there are times when you go in and they have unadvertised deals. Last week they had eggs for $.29 a dozen. I would hate to have to move to a place that didn’t have an Aldi.

  40. My ultimate must haves from Aldi are the Fit & Active 45 calorie bread and Fit & Active Light String Cheese. These have helped me so much on my weight loss journey and have helped me save too since they are soooo much cheaper that the comparable brands. Love Aldi so much! Thank you for the chance! 🙂

  117. I love shopping at Aldi’s because it is so affordable! I can get a cart full of groceries for under a $100! You can’t do that at any other grocery store! Plus they have a huge selection of fresh and organic produce for reasonable prices! I love how they have banned pesticides from the produce and how they source their produce from local farms within the state! I love Aldi’s and I shop there all the time!

  142. I am always pleasantly surprised at how many groceries I am carrying out of Aldi for such a small amount of money! I am required to avoid buying eleven difference allergens as I purchase food for our family of six with various food allergies. Since I can now find specialty items such as gluten free breads and cereal products, dairy alternatives like almond milk, grains like flax and quinoa, and much more, Aldi is often my “one stop shop”!

  177. I shop at Aldi for their consistently low prices on produce. I also enjoy the different products during their themed weeks. I’ve learned to stock up because it may be a year before something as delicious as butternut squash pasta sauce returns. That was a delightful surprise and I wish I had bought more. I also enjoy the seasonal items. I bought a beach cabana that’s like a pop-up tent back in the early summer. My family loves the chocolates there too.

Well I have to say Addis is my #1 store when Addis was closed for the month of remodeling I was lost I even went out to Manitowoc and Grafton and my usual products were not stocked they were low or empty maybe I went wrong time of the week. Omg when they opened the new store I was in the clouds so happy happy!!   226. I love Aldi’s for the great prices without sacrificing the tastes that I enjoy. I especially like the frozen veggies and the frozen stir fries that they have. The true bargains are the produce for me. Consistently, they have better prices on produce than any of the local competitors, yes, even the Walmart. I can easily save 20-40% off of my grocery budget. They always have some neat non-grocery items too that I occasionally buy without planning.
