We talked about Michelle’s fruit pizzas on the podcast. So here you go. Make them with and for your family, and enjoy the season’s freshest berries.

How cute are these? Michelle suggests you cook your beef in a very hot skillet. Sear that meat!

We talked on the podcast about the importance of marketing good nutrition to kids, and turning food meatloaf into mini loaves or muffins can be part of your marketing strategy. Making foods cute and assigning fun names is a great way to get kids excited about trying new foods and recipes.
Show Highlights:
- Michelle’s background as a dietitian and a chef, and her life in Carmel, Indiana with her husband and two daughters, ages 5 and 9

- How some processed foods, like canned beans, are actually a good nutritional choice
- Michelle’s extensive recipe testing process when she writes a cookbook
- Michelle’s daughters’ favorites: Four Seasons Fruit Pizza and “Meatball Cupcakes”

- Michelle’s recipe for Turkey, Vegetable, and Oat Mini-Meatloaves with Marinara Sauce: finely chopped mushrooms, onion, garlic, dry rolled oats, and lean ground turkey
- Why dry rolled oats are a wholesome recipe swap for bread crumbs
- Hoisin Beef and Edamame Lettuce Wraps: use Boston Bibb lettuce as a “cup,” and a sauce made with soy sauce, rice wine vinegar, hoisin sauce, and Chinese mustard. Sear the ground beef with onion, garlic, ginger, sesame seeds, frozen edamame, and canned water chestnuts. Stir in the sauce and serve in lettuce cups.

- Whole-grain pasta with tomato sauce, sautéed spinach, ground beef or chicken, veggies, seasoning, and olive oil
- Stir-fry with leftover veggies, onion, garlic, tamari sauce or reduced-sodium soy sauce, and dark sesame oil (Michelle’s secret ingredient for Asian dishes)
- Marinated Chicken Thighs with apple cider vinegar, dijon mustard, seasoning, and oil (great for grilling or baking)
- Tips for healthy snacking for kids and adults: whole fruit, cheese sticks, hummus with seeded crackers, hard-boiled eggs, natural microwave popcorn, raisins, and nuts

We like to make whole wheat jachnun with fresh tomato
I’m super busy being a working mom and going back to school. I need quick meals and need healthy clean recipes. This cookbook would be great.
I want to win the book so that I have many more ideas for meals.
One super easy, healthy and delicious dinner we do in a pinch is cauliflower “Alfredo” pasta.
That sounds awesome-what recipe do you recommend?
I adore all of her recipes. What are you craving?
I want to win the book Clean Eating for Busy Families: Simple and Satisfying Real-Food Recipes You and Your Kids Will Love. My favorite wholesome, easy family dinner recipe is Herbed Chicken and Squash.
I make a frittata using up the leftover veggies and herbs in the fridge.
I would love to win this cookbook because I need more ideas for healthy, yummy recipes for my family. My son is taking an interest in cooking and I think this cookbook would be great for us to use!
I think it’s great your son is taking an interest in cooking. The more we can get our kiddos into the kitchen, the better!
I would love this cookbook because my kids were excited about it after the podcast.
My daughter is going to love making the fruit pizzas! Michelle’s cookbook sounds fantastic–I am always looking for new recipes to serve my kids. Their current favorite dinner is roasted chicken and veggies–such a simple meal! I have kids choose at least three different colored vegetables from the pan of six vegetables or so. My son is always relieved when he doesn’t have to eat his least favorite ones. 🙂
I love that idea of having everyone choose their favorite veggies from the pan. Brilliant!
My family likes simple pan-fried rainbow trout or salmon with steamed green beans or broccoli and sweet potatoes.
Oh yum. You had me at salmon 🙂
Our family needs some help transitioning our cooking repertoire to “clean eating” and I am not quite sure how to get there. A book like yours is something I have been looking for.
Thanks for entering. Be sure to listen to the interview. It’s packed w/ great info to get you going!
We love to have scrambled eggs with fruit when we are in a pinch for lunch and dinner.
I love cooking clean at home, but I quickly run out of fast ideas. I’m excited to find more recipes that work for my busy family.
Taco anything is our go to quick meal!
My favorite clean meal would be marinating some chicken or beef & grilling it & throwing some spices on various fresh vegetables & roasting them. Thanks for the chance to win your cookbook!

Sorry, this is a duplicate.
We like to have a family taco night – usually chicken or black beans. The kids have “taco trucks” to hold their tacos and can add their own toppings. It’s pretty messy, but the kids enjoy “making” their own tacos.
How cute. I love the “Taco Truck” idea!
We usually have a bunch of beef and turkey meatballs made ahead for those busy nights. Meatballs can be added to just about anything!
I would love to try some new recipes such as the peanut butter brittle bars. Yum!!
I would love the book for new ideas for healthy quick meals!
I try to always have frozen homemade meatballs at the ready: I make them with a mix of ground beef and turkey, and add extra diced mushrooms before baking them. I freeze them in FoodSaver bags so it’s as easy as dropping a package into the pot of water heating up for pasta while you heat up the sauce.
Luckily everyone in the family loves spaghetti and meatballs.
This book sounds great , the chicken piccata sounds amazing
One of our favorite more clean eating recipes (I have two teenage boys!) is skewars – packed with chicken, chicken sausage, peppers, and onions served over couscous. I would like to win the book to find healthy snacks and desserts as well.
I’m striving to “healthify” my family’s meals and share the decision making, shopping, and meal prep “opportunities” with my husband and sons rather than falling back on quesadillas, tacos or tuna sandwiches for our quick meals.
This was one of my favorite podcasts by far. This is how I feed my family. Real, whole foods but she is keeping it simple! My kids love to help me in the kitchen and I love teaching them what eating healthy is. Home cooked meals and yes you can have pasta!! I’m not a fan of dietitians cutting out food groups. I love the concept of cutting the plate in half having veggies, then some protein and some whole grains and full fat milk on the side!!! As long as it real food and homemade its healthy.
I would love to win this book because I struggle with coming up with great, quick, and healthy meal ideas for my kiddos. They are all involved in different sports and activities every night, it makes eating together tough, and makes it tough to cook! I feel like I always make the same stuff for dinner! Having 5 kids that all like different things makes it hard too! Thanks 🙂
Wow. You have a full plate for sure! Keep up the great work. Hope you’ll tune in to this show. Michelle has lots of great dinner ideas 🙂
I would love to have more easy healthy recipes to add to our dinner plan!
My favourite wholesome, easy family dinner recipe is roasted chicken with root vegetables. I make this in the fall.
I’m a UK based RD, wife and mummy of two and would like to win this book as we are so busy, stuck in a dinner rut and need new ideas for quick healthy meals! Our go to is chicken chow mien made with chicken & veggies stir fried with soy sauce, garlic, ginger, oyster sauce, lemongrass and noodles!
Hi Sarah: Thanks for stopping by LHT! Where are you located in the UK? My hubby is from England and we have family in London and Taunton!
I would love this book! The recipes on the podcast sounded yummy and very doable. My favorite go to clean eating dinner recipe is salmon tacos. My kids love to build their own.
