Carrot Sunshine Smoothie Bowl

It's time to rise and shine with this adorable, nutrient-packed smoothie bowl! The ingredients may surprise you, especially the beans and carrot juice, but they work beautifully in this beautiful bowl! By adding pineapple, banana, and honey, I blend natural sweetness into every sunny serving.
Ingredients
  • ¾ cup frozen pineapple chunks
  • ½ cup cannellini beans, drained and rinsed
  • ½ cup carrot juice
  • ½ sliced and frozen banana
  • 2 teaspoons honey
  • 2 teaspoons chia seeds
  • 1 teaspoon coconut oil, softened
  • ¼ teaspoon ground cinnamon
  • Optional Toppings: Banana, o-shaped cereal, dried cranberries, dried apricots
Instructions
  1. Place the pineapple, beans, juice, banana, honey, chia seeds, and cinnamon in a blender and blend until smooth.
  2. Pour into individual bowls and garnish with your choice of optional toppings.
