Gluten-Free Chocolate, Orange & Almond Sparkle Cookies

Cookie jars are brimming during the holidays, so why not fill them with something that's delicious and sweet but a little better for you. I've got you covered with these easy-to-make cookies. Use any color sprinkle ... but the shinier the better!
Ingredients
  • 1 cup 1 to 1 gluten-free baking flour
  • 1 cup almond flour
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs, beaten
  • ⅔ cup granulated sugar
  • ½ cup organic canola oil
  • 2 teaspoons vanilla extract
  • 1 teaspoon orange zest
  • 5 to 6 tablespoons Sprinkles shimmer sugar
Instructions
  1. Preheat the oven to 350°F. Lightly oil or coat two large baking sheets with nonstick cooking spray and set aside.
  2. Place the gluten free flour, almond flour, cocoa powder, baking soda, and salt in a large bowl and whisk until well combined.
  3. Place the eggs, sugar, oil, vanilla, and zest in a medium-size bowl and whisk until well combined.
  4. Add the egg mixture to the flour mixture and stir until combined. Place in the refrigerator for about 30 minutes (or longer) to firm up the batter.
  5. Pour the shimmer sugar onto a plate. Roll the dough into thirty two 1-inch balls and coat evenly with the sugar. Place the cookies on the prepared baking sheets, leaving a 1-inch space in between.
  6. Bake until cooked, about 10 minutes. Transfer the cookies to a wire rack and cool for 5 minutes before serving. Repeat with the remaining dough.
